How to Enjoy a Great Trade Meal – Trader Joe’s Sausage and Sauerkraut

Trader Joe’s has a wonderful range of different products including sauerkraut and pickled persian cucumbers. I have tried many of their other products and enjoyed them too, until I discovered that they had added something called probiotics to their “Sauerkraut”. Trader Joe’s explanation of their “Sauerkraut Premium” was that it contains “bacteria-filled cultures” that have been heat cured and then pasteurized. The cultures inside the bottle then get added to pickled and fermented cucumbers to make a delicious snack, or nutritious drink. They say it contains vitamins and minerals, as well as being a good source of probiotics – beneficial bacteria which are vital for your digestion. I found that their fermented sauerkraut had a slightly sweeter taste, but you can pick your favorite way – hot or cold.

However, there are some very serious reasons why you should avoid most store bought sauerkraut. The first is that unless you live in a cave where there is daily sunshine, you will not get enough vitamin C from it. It is the antioxidant Vitamin C that works to neutralize free radicals that cause disease. So, it seems that the fermented version of sauerkraut is a much better choice for a nutritious raw food diet.

If you do eat sauerkraut from time to time, consider taking it in its unprocessed state. Trader Joe’s does sell dehydrated raw sauerkraut in their own jars. Just keep in mind that the Trader’s brand does not use any preservatives to preserve it; rather it is pasteurized (high temperatures) to remove the most nutrients. So, if you want to enjoy this wonderful fermented treat, remember to take it raw. It will be much healthier for you.

You might find it strange that I mentioned “pasteurized” while referring to Trader Joe’s sauerkraut – since it uses no heat to preserve it. But, many raw foods people don’t like the taste of their foods that have been cooked (particularly when those foods contain high-fat, high sugar content foods). Some people will choose to take the easy way out and purchase a store bought sauerkraut. Unfortunately, most store bought sauerkraut is pasteurized at the very high temperature that kills all of the beneficial bacteria. Therefore, while it may look and taste great, it will not be as healthy as pickled raw sauerkraut.

You can also find pickled persian cucumbers at Trader Joe’s. Unfortunately, these organic, sustainable, fresh cucumbers will not be available in the deli section. Instead, you will have to go to the bakery or the vegetable aisle. You might even be able to find pickled persian cucumbers there – they are baked and available in a few varieties. However, be prepared – these are definitely not as tasty as their fermented cousins.

To create delicious pickled raw sauerkraut, you will need a jar, some vinegar, and some sugar. Pickled sauerkraut must be stored in a cool dark place, away from direct sunlight and air. Once picked, allow the pickled in vinegar to marinate for about five hours, or until the sugar has dissolved completely. The pickled in vinegar will keep for up to a week, so it’s definitely a good deal. Store in a bottle in a cool dark place.

The Trader Joe’s version of pickled raw sauerkraut costs $4.99 per pound, but you can certainly make your own at home. To make pickled sauerkraut, simply soak your grains (white rice or brown rice) overnight in water. After soaking, drain the water and rinse the grains, making sure to squeeze out the excess water. Place the grains in a small bowl, add vinegar, and mix until the vinegar has dissolved.
